Removing aspects of a motion graphic template

I found a template that I like in adobe stock but there is one key part that I want to remove. The graphic changes color then settles on the colors I want. Is it possible to edit out the color changes of the text but leave the rest alone?

Open it in After Effects and you should be able to do that.
