Since update to Premiere 23.1: Slow performance on Mac Tower 2019

Since the update, the program has been very slow in performance.
I didn't install Ventura because I've heard about problems with the new operating system.
So I continue to use "macOS Monterey".
But I installed the new Premiere update "23.1" and since then working with Premiere has been a pain.

Hardware:
- Mac Pro 2019 (Tower)

- 3.3GHz 12-core Intel Xeon W

- 192GB 2933MHz DDR4

- Graphic card: AMD Radeon Pro Vega II 32 GB

I no longer want to downgrade to version 22.0 because in the meantime I have edited and saved over 20 projects with version 23.1 and then I can no longer open the projects in the old version.
What can I do to make working with Premiere as fast as it used to be?

Thanks for your Help!

I can't comment on your hardware, as I'm a Win guy. So, I'll leave that. You can set your projects to open with a different version of PP. Here's a thread:
