Im pretty stupid when it comes to premiere. I used a bunch of 1080p videos and exported it as "match sequence settings". This has worked fine before, but for some reason it comes out as 720p? Can someone point me in the right direction?

If you get 720 when using the "match sequence settings" your sequence is 720 instead of 1080. Go to Sequence > Sequence Settings and check the settings.

Averdahl has the issue. I'm wondering if there's a 720 clip in there and when you made this sequence, it was the first clip chosen? If so, Premeire would have made a matching 720 sequence.
