Im trying to add some text graphics ovre my video. I know I learned how to do it in the tutorial but I have forgotten since then and I cant find the tutorial itself. Each time I try to add the graphic I only see options to overwrite or insert but I want to do it over the video itself without cutting to a black screen, almost like a small title or caption.

If I'm understanding you - click on the 'T' icon in your 'tools' menu, then click in your Program window and a text box will appear - start typing 🙂

If the title is in the bin just drag it over the part of the video where you want it to show up in video track 2.
