Catalina 10.15.7 Longer exports and more prone to crashing

I had a sound issue with my 2019 Macbook Pro '16 and the Apple Store advised me to do a software update. Big mistake.

I'm posting to report that Adobe Premiere is incredibly buggy in this OS update; the whole program will cause my displays to glitch out and then I'd have to log back in and reopen the software for another chance at getting work done. 

If this forum can lead me in a direction on how I can revert my OS (Mojave preferably) that would be wonderful.
