premiere is an extremely deep complex program that's gonna take some time and effort to learn. There are amazing resources on the internet and on the adobe site. It's a professional program and designed to meet the demands of professionals. Keep things simple to start off and when you get stuck, start googling or post here.
Not sure what resources are available in French...

I don't understand. Are you looking for a adobe video tutorial? If you go to the help menu and you'll see how to access tutorials. If you're asking about videos created using adobe premiere, many feature films are now cut with premiere. Just do some googling.

To expand mgrenadier's comment, Premiere Pro is a widely used pro app around the world, including both broadcast and "film" motion-picture use. At the Sundance 2019 film festival, over 50% of the flicks were cut in Premiere ... the first time in a long time any one app had a complete majority.
But again ... it's deep, complex, and built to be all manually operated. If you don't have a decent understanding of pro editing processes before starting out with it, you need to get some training. I have typically recommended the lynda.com (now linkedinlearning.com) subscription tutorials, but I don't know how well they support French speakers.
There is another major tutorial subscription site that is European based, but I've forgot the name.

The pro level apps like Premiere Pro and Avid are deep and wide with capabilities, built on the assumption that the user is experienced, works with this hours a day, and knows exactly what they want to accomplish. They have very few automated 'tools' like the prosumer apps do. I know, most coming from a prosumer app think that a pro app is even more automated ... but the reverse is true. The pro apps are less automated.
More manual. And designed for the user to create entire sets of presets to to the things they do often, and exactly how they want it done.
As noted, this takes a lot of work to learn. But as you are learning, it has far more capabilities to do things also.
