Media Encoder & Premiere Pro 2021 Issues

I'm running Catalina 10.15.7 on a 2020 MacBook Pro 16" with 64 mb ram.

Issue 1) Poor Export Quality: I have a 20 minute live stream I cut up to repurpose elsewhere.  This last batch comes over super jittery, lots of dropped frames, skipping, etc. Audio seems fine. Using the default hardware (metal) settings in Premiere. 

Issue 2) Both Premiere Pro 2021 and Media Encoder 2021 will not quit. I have to "force quit" to get these apps to stop running. 

They both become (not responding) in my Force Quit Applications window.

Any help is appreciated.

Not sure what is going on with your video without more information about the format. However, You might want to download the free app Handbrake and run the video through and convert to a fixed frame rate. Then take the video back into Premiere and see if it behaves better.
