Sometimes I'm able to italicize part of a caption, other times, I can only apply it to the entire caption.  This happens on both my underpowered 2012 macbookpro running mojave and in my much more powerful windows machine, both running the latest version of premiere 2021.  Not a big deal, cause I will be exporting an srt and then converting it to an encore text file to import into encore and will then need to reapply the italics (which I tested and seems to work fine).  Just would like to be able to match my clients notes for his review.  Am I missing something (wouldn't be the first time).

Be careful of the Caption Track Styles. They will overwrite such edits to the font style selected.
