I teach in a place that has Adobe CC on public machines (with our organizational accounts). Some of our studnts have their own accounts as well, but we don't want them logging our machines out of our accounts and logging in to their own. What I'm wondering is this: if a student begins a project on one of our machines using one of our accounts, could they save a project in progress to an external drive that also has all of their footage and files on it, and then reopen that project from that same external drive on their own machine using their own account?

Yes. 

As long as everything is saved on external drive it should open on another system no matter what account is being used.
