I can't get anything to render. I've tried changing the GPU thing but then certain transitions don't render and a big bar comes across my video saying need GPU acceleration. None of these are VR related. I tried deleting my cache fules, resertting preferences, etc. Nothing has helped. The render keeps freezing. I am so frustarted. I can't work. It's gotta be this update causing issues.

I'm assuming this is your first post to this thread.  First, upgrades often require better hardware.  Please tell us your system specs: OS version, Premiere version, amount of RAM, Hardware specs including graphics card and your source properties and sequence settings.

Certain effects require hardware acceleration if you're video card doesn't meet the new requirements of the latest version of premiere, that's probably why you're having issues.

here's no reason you can't revert to the previous version that was aparently working.   If you by some chance deleted the previous version, you should be able to reinstall it from within the creative cloud app.  And if you've made extensive changes since updating, you can now export an xml from premiere 2021 and it will open the project in previous versions of Premiere.
