Is there any way to covert an adobe air app into a video file?

Your question seems misplaced. This venue is for dealing with an output named "AirHelp" from the Adobe RoboHelp application.
But I'm not sure where it actually should be.
Although, I think that if you wanted a video of an AIR app, you might need to use a tool that would simply record the screen as you manipulated the AIR app. Then produce a video from that.
Adobe offers a few tools that might help. Adobe Captivate has the ability to record your screen (or a smaller segment of the screen) and produce that as a video. There is another tool called Adobe Presenter Video Express that records your screen and produces a video.
Outside the Adobe realm, you might consider TechSmith Camtasia or TechSmith SnagIt to record your screen and produce a video.
And there are on-line tools, such as ScreenCastOMatic that can do it.
