Speaking only for myself, I've sold portraits (children and adults), food, wallpapers, flowers, animals, surreal and fantasy, landscapes, nature and more. In other words, the same types of images often submitted by photographers and illustrators. The important thing to remember is that AI rarely if ever spits out images that are stock ready and will need varying degrees of serious editing.

Apart from the artist hub, look for inspiration from the top sellers. And be seasonal. Christmas and new year has just passed in terms of stock. I suppose you should now start with spring assets and Easter assets. Don't forget, you will need about 2 months of waiting time, before your asset gets moderated.
