Am I allowed to edit a icon to make my logo?

I found an asset I'd like to purchase a license for, but I'm unsure if I'm allowed to edit the icon or have it on products I plan to sell?

Yes, you can edit images that you license from Adobe stock. Regarding making it your logo, just know that you cannot trademark any asset derived from a licensed image. If you want trademark protection for your logo you should ask a designer to create a unique design for you.
