So for example if I buy 5 credits for $49.95, I can buy 1 premium photo with that, that usually cost between 249.99-499.99? Is that correct? Why such a jump in price?

The information about 5 credits at $49.99 was a general information wherein you get 1 premium image.
So to answer your question, firstly I would like to let you know that each premium image has a different pricing.
The price and the number of credits for each Adobe Stock premium image are mentioned on the website.
Please sign in to stock.adobe.com using your Adobe ID. When you click on the image you should see the cost in credits
as shown in the screenshot attached below:

My screen doesn't show a credit value for images, it just shows the dollar amount. How do I get it to show credits?

Since you have not yet purchased the credit packs you are unable to see the cost in credits for each image.
The file(99491110) which you are trying to purchase will cost you 25 credits for the large one and 12 credits for the small size.
