Hi everyone, I'm new to using Adobe and one thing that is baffling me is templates with wording already in. How do I delete the wording to put my own in? I appreciate any help you guys can offer

You are talking about which template? Licensing an asset normally expects you to edit it with the tool used to create the template. In some cases, you can also edit the asset with a different tool. But in all cases, you need to use the right tool. You can't fix something with a screwdriver if a hammer is needed.

A tool is a program. And why can't you simply copypaste that number (231140778) in your post, so that I can simply copypaste it in the search box. Or you simply show the link: https://stock.adobe.com/images/elegant-christmas-party-poster-template-with-sample-text/231140778
That is so much easier.
You will need Adobe Illustrator to change the text. If the asset is an EPS, that could work also with a different non-Adobe program.

Thank you for your help. Apologies for not copying and pasting but as stated I'm very new to using Adobe and still in the process of learning.
The file type is AI/EPS & JPEG, so these files can be used on Adobe illustrator but EPS can be used in non Adobe programmes?

The file is either EPS or AI, whitch means Adobe illustrator. The JPEG, which you can also download, is of no help for your task.
Adobe Illustrator files can normally only be edited by Adobe Illustrator. Third party programs claiming compatibility are normally supporting only very old flavours of the .ai file format. The EPS file format has not evolved for the last decencies, so you can open that standard with probably any vector program, but the experience may be disapointing as there is probably only a basic structure.
You still not answered my initial question about what tool (program) you intend to use. Christmas will be over when we are ready with this. If you want to change the text, you need Illustrator.
