Suddenly...my Default PDF Viewer is Adobe....I did not select that.  I wish to delete this and return to Chrome or Word.  I can choose to use a different place to open, of course, but I see no options to make that choice Default.  Thanks.  Mini Mac.   Windows for Mac

Adobe is a company, not an application.

 

What you are seeing is called "associations" and is done at the OS level: Mac Finder or Windows File Explorer.

Probably you did it - the application is always pushing you to set it as default - which is very irritating. I also did it by mistake and spend literally hours trying to fix it. The standard way of "open with..." > "other" > "always open with" doesn't work for some reason. 
I use Adobe Acrobat Pro and I am quite unsatisfied with the app. It doesn't match the frendliness of the MacOS system and make me feel like I am back on Windows - it bombards me with different pop-ups... I was struggling to tu

I was struggling to turn off this auto OCR option... it OCRs an image set up as a background... what is the point?! Completely unsatisfied! On trial. Would never pay for that.
