PS - Does anyone know the keyboard shortcut to toggle between tabs in the workspace?

Photoshop uses the same shortcut as your OS; your post says you’re using macOS so you can use the standard Mac shortcut for cycling open windows that works in any app: Command-` (grave accent, the top left key on a US English keyboard).
Additionally, Photoshop still supports its original window cycling shortcut that it’s had since the beginning (1990), before Apple added their shortcut. That keyboard shortcut is Control-Tab.
It does look like this could be improved. Below is a picture of long document names in Photoshop (top) and two of its competitors. None of them does a great job, because of the tradeoff: The more of the file name you show in the tab, the fewer tabs you can click on; but the more tabs you show, the less you can see of each file name because you can only see a few characters.
Note that in addition to the >> menu, in Photoshop all filenames are also at the bottom of the Window menu.
There is a Photoshop plug-in that lets you see open documents in a thumbnail grid to help identify them visually, but the only reason I’m not naming it is that the reviews suggest it does not work with the latest versions of Photoshop. But you could look around for a plug-in that shows open docs the way you want, because there isn’t much you can do to change how Photoshop works in this area except to submit a feature request in the Ideas section of this community.
