I agree that is weird. I followed the steps you listed and could not replicate the problem.  However, I found another person reporting the same issue at https://feedback.photoshop.com/conversations/photoshop/photoshop-saving-copy-not-saving-over-jpg-file/5f5f46014b561a3d426de6cd   This is how they solved it, and I hope it works for you:   1) Close all Adobe related processes in activity monitor (Creative cloud, Core sync, CC library, services for adobe desktop app, adobe desktop service, Adobe IPC broker, AAM updater) 2) Navigate to following locations and assign the current user full permissions to adobe folders. To navigate click go from menu bar at then click goto.. type /Library/application support/   and click go. 3) To assign the permission right click on adobe folder and click Get info.. A property window will open. Then click on lock symbol to enable editing. Then click + sign to add your username. Then change read only to read and write. Then click gear symbol at the bottom and click apply to enclosed items and click ok. ... View more

If your Photoshop file as layers, and you try to save as JPG, you cannot uncheck Save As Copy. That has always been that way in Photoshop. If you flatten the Photoshop file, you will be able to save as JPG without making a copy. ... View more

You could try dragging the lookup table file that you saved into this folder: C:\Program Files\Adobe\Adobe Photoshop 2021\Presets\3DLUTs   By the way, when I tried comparing the LUTs in Photoshop 2021 with the previous version, on my computer they look the same. Have you tried the LUTs on multiple images on your computer? If you're getting the same color problem with more than one image, there may be a bug in 2021, although I'm not experiencing it on my computer.   ... View more

If you have uninstalled the previous version of Photoshop, you can re-install it in the Creative Cloud Desktop application. (Do not uninstall your current version of Photoshop.) Select File > Export > Color Lookup Tables. Enter a description in the Color Lookup Table dialog box. Enter a value in the Grid Points field (0-256). A higher value for this field creates bigger files having higher quality.  Select a format, click OK, and save the file. You can quit the previous version of Photoshop. Using JJMack's suggestions the photo can be improved.  You could try the select menu, like this: Target the image layer and Select > Color Range > Shadows. Click OK and create a curves adjustment layer. Raise the curve to lighten the darker areas. Target the image layer again. This time Select > Color Range > Highlights. Create a Curves adjustment layer and move the curve down to darken the highlights a little.  Lightening the shadows and darkening the highlights too much runs the risk of making the photo look flat. If you go too far, since the Curves are adjustment layers you can always double click a curves layer and re-adjust the curve. ... View more
