I usually just create a coloured layer in behind the logo as @Ton Frederiks mentioned; however, I tried the "simulate page color" with a white pdf logo that I had dragged in from my finder (not embedded, and then embedded), and didn't have a problem changing the artboard colour. The logo stayed white even with the colour change. Are you able to screenshot your settings? What is the file format of the imported logo?

@Monika Gause has great ideas to try! Something else you can try is using the process of elimination. If it's a central leaf that you want to select/keep, try hiding (apple/command + 3 on a Mac) or even deleting everything around the leaf.
Something else that could help, alongside the above method, is Select > Same > Fill Colour and either lock (apple/command + 2) it or hide those objects, one colour at a time.
Finally, when you unlock or unhide everything, they will all appear selected. Before deselecting, you can then group them, or Copy + Cut + Paste In Front (apple/command C + apple/command X + apple/command F) into a new layer to keep these objects separated, but still in the same position on the artboard. Keep in mind, when grouping objects, some objects in behind may join objects in the front, which can affect the appearance of the image.

1. FIREFLY: Prompt - “side profile of cartoon ladybug laying on its back with it's mouth opened really wide.” (not quite, but this one worked lol)
2. ILLUSTRATOR: Prompt - “popsicles melting on the ground. Amusement park scenery in the background.” Cleaned up some odd parts on the left side of the image (weird line and sky gradient). Added drips / shadows / highlights to popsicle. Isolated popsicle. Created the bug’s view of the popsicle.
3. PHOTOSHOP: Isolated lady bug, repositioned antennas, cleaned up eye and shell; added shadows at base of new antennas. Merged bug layers and brought both the bug and popsicle images into one file. Added shadows under the bug and changed its lighting, added/blended popsicle reflections into the eyes.

No problem 😊 For further troubleshooting options, you could try scaling the "S" larger and smaller. It could just be what's showing on your monitor at certain zoom percentages, as you mentioned. Bringing the questionable letter(s) into more apps, might also show the letter(s) sharp/clear. Make sure you're viewing at 100% if you're not in a vector app, though. If you have a desktop printer nearby, you can always test print as well. Since it's still vector, you should be fine 😊

The bottom letter almost looks rasterized. Is there a chance that you have rasterized it by mistake (especially if it's different than the other letters)? If it's text that has been outlined only, it should retain its smoothness.

@EODK9 Your svg looks fine for printing. I would convert it to CMYK and save a pdf as "press quality" before printing. I also like Doug's suggestion of adding a darker silhouette behind it in case there are any white spaces between the shapes where colour might be missing. One area that caught my eye was the white "crack" at the very bottom of the image (you can see a little empty triangle), but the silhouette behind it will hide any of this. If your image is printed small enough, chances are, any little white space won't even be noticeable anyway.
If you're just using the svg for brochures and flyers, there will be no problem with digital or offset printing (But first convert to CMYK, pdf).
As far as logos, I don't recommend using detailed illustrations as a logo. This is where you can also run into issues with various media (printability - such as embroidery, silk screen, letterpress, etc; and scalability/visibility).
If you want the colours more simplified, instead of using a conversion app that you purchased, you can take the original photo / jpg, and bring it into Illustrator. Click on your jpg image after placing in Illustrator. Then choose "Image Trace." Go to Window > Image Trace to view options, and play around with the selections . You can choose how detailed you'd like it. Once you're happy with the preview, you can expand the image to vector. However, your image should print fine as is, especially once converted to cmyk and saved as press quality.
Your svg is only 541 kb, which is an okay file size for web... but if you prefer to use a raster image (not a bunch of vector shapes), you can make it into a png - a single image with a transparent background - for web use. Only make the file dimensions as large as you need it to be, as scaling up will lose quality in raster images.

Thank you so much for sending those hex codes, @MimaO. Seeing those images, it looks to me like it could be a printer setting. One of the colours that you mentioned doesn't have black and it's still looking grey on your printouts. Have you checked that the black/grayscale settings on your printer are not selected? This could potentially be causing the issue. As Monika suggested, I would also check with Epson. I highly recommend printing in CMYK. RGB printing has it purpose, but standard ink for desktop printers is generally cyan, magenta, yellow, and black. Would you be able to provide 2 hex code examples? I'll take a look and see if we can get this sorted.

Are these colours that you're creating yourself? If so, try removing blacks and adding other colours to darken as needed. If it's a photo, make sure it's CMYK and then try eyedropping to check colour values, or if you have Photoshop, have a look at channels. Adjusting colours to remove some black should hopefully help.

In an enchanted forest with fireflies, is a giant 3-layer cake with white icing. Purple sugared pansies and multiple sugared birdhouses decorate the cake. Lively gummy birds flying.

The great thing with Illustrator is that there are different methods that can be used to obtain the same or similar results. Ton has given a great example, and Monika has a great point.
Here is an additional method:
A - Create the capsule shape by rounding the corners of a rectangle. Next, select the capsule shape, choose Object > Path > Offset Path. Use "preview" to help you determine the space / distance you'd like the line to be from your shape. I made my spacing 0.25"
B - Select both the capsule and new path. Duplicate the two objects together, then hold shift and drag the two objects to the right, making sure the lines overlap perfectly. Use smart guides (apple + U on a Mac) to assist. Repeat as many times as needed.
C - Using the white arrow (direct selection tool), select and delete the path's (line) anchor points at locations 1, 2, and 3
D - You will end up with a couple overlapping lines. Remove excess anchor points and then join each path together: Object > Path > Join (apple + J on a Mac)
From here, you can stylize with a gradient.

Since you're creating promo offers for a popular chain, I would also recommend looking at possibly incorporting any necessary brand elements, pre-existing marketing, and guidelines.
