Actually, that's just what they did - but not in the way people think.
Direct save to jpeg was introduced in CS5 in 2010, to a considerable amount of fanfare. Boy, what a big hole that turned out to be. How they must regret that now that Apple made it impossible.
Up until and including CS4, you couldn't save to jpeg at all, unless the file was 8 bit, flat, with no transparency or alpha channels. You just couldn't! And that's how every other application still works. If they had just done nothing in 2010, everything would have been business as usual and nobody would have ever complained.

The way to do this, which is much simpler than most of the offered solutions is:
On the Mac desktop, drag the icon of the cloud-synced folder, and drop it on the Bridge app icon or on an alias/shortcut of the Bridge app icon, such as in the Dock.
Because when a folder is dropped on the Bridge app icon, regardless of how buried its real location is, Bridge switches the Content tab to view the contents of the dropped folder. With this method, there is no need to manually dig down into the Library folder, no need to change any options to make it visible, no need for any Terminal commands. Just drop the cloud-synced folder on the Bridge app icon…one quick step.
The idea someone mentioned to drop it in the Favorites panel also works and is a variation on this, but the method above is useful for all the times you don't need it added to your Favorites.
Also important: Do not confuse this with dropping a file into a Bridge application window, because that’s different. Dropping a file into a Bridge window copies or moves it there, as if it was a Finder window. You want to drop it on the Bridge app icon only, not in the window.

Crashes are usually caused by buggy video drivers (or dual GPUs in many laptops). It's really out of Adobe's control. In my experience Photoshop is rock solid. I haven't seen a crash in years.
That said, there is built-in crash recovery. You set the intervals in Preferences. However, note that for this to be activated, the file has to be saved to disk at least once. After a crash, Photoshop will reopen whatever you had open when the crash occurred.
Of course, Peru Bob gave the real answer: you should save incrementally as you work.

I dumped the preference file and appears to fix the issue... seems everytime I upgrade Photoshop, my preferences file is corrupted and I have to reset and then spend time resetting my preferences... Adobe should devise a better upgrade process...

Typically the new version is release on the first day of Adobe MAX (which is online and free this year). Watch for the new version to be released on October 26. If you want v. 21, install it now before then, as Adobe only offers the current and one previous version.

You can fix, then duplicate them, then simply replace them when things go wonky. I have no idea why for decades, we've had issues with preferences (and not just Photoshop!) but that's such a common fix that is used over and over again.
This action only affects the items found in the preferences dialog box. Numerous program settings are stored in the Adobe Photoshop Preferences file, including general display options, file-saving options, performance options, cursor options, transparency options, type options, and options for plug‑ins and scratch disks. Brushes (and lots of other setting) are not affected by deleting preferences. You may wish to make a screen capture of the settings in the Preferences dialog to reset them prior to deleting of this file.

And if you do not want COPY you can remove it one way or an other. Their your files Adobe, Apple, Microsoft, Etc can Append Copy to what you set, If their file system will not let you remove the copy with a rename there is a disk utility that can renove the copy. They your files not their files.
