Premiere Pro and editing with extFS formatted NAS drives

Hi - wondeirng if there is any information out there about using a custom NAS setup with PC components, OS Linux and drives formatted extFS for editing with iMac Premiere Pro?
I'm looking to set up a custom server for a documentary project and considering the options.

One option is to use a working PC and install Linux, reformat the drives extFS and serve content. My query is - will this affect the editor? Is there latency issues with Premiere pro and Linux drives?
This should enable the use of larger capacity drives - like 8TB+

Other option is to frankenstein an old Mac Pro, obviously this will integrate much more smoothly, yet wont enable the use of larger capacity drives.

Rather than buying an off the shelf NAS, we are customising one for increased functionality and performance.

Any advice and insight very welcome.
