I've used footage shot on an iPhone before, is it not compatible with Premiere anymore, or do I have to change the format somehow? I'm a bit of a newbie still, but I wanted to try to make things simple because it's a school project.

Don't worry about that comment. Some of our pro users do not recommend shooting on mobile devices at all. I do feel that you can make them work for projects like the one you're working on with a little care. I will try and help you on your core issue: your clips are not playing back very well.
