Basically, when I go to copy settings, I notice the temperature spike and the fan go into high gear, before the app quits (no crash report) or the whole computer crashes. Fans running, computer crashing, is a symptom of the computer overheating because of a cooling system failure somehwere. I was editing without this issue, as recently as a couple of weeks ago. More evidence that something has stopped working properly, and the obvious choice is the cooling system. If you can open the computer case, make sure all fans are running properly. Vaccuum out the dust in the case. Vaccuum out the air vents in the case so they are not blocked by dust. Make sure all vents are not clocked by furniture or a wall.

Show us a screen capture of your LrC folder panel. Use the "Insert Photos" icon to include your screen capture in your reply. Do NOT attach files. Also please show us another screen capture of the equivalent part of the Mac Finder window so we can see the mismatch.

Definitely show us a screen capture of the entire Import dialog screen, as suggested by @drtonyb . Please use the "Insert Photos" icon to include your screen capture in your reply. Also, I know you said 1900 raw files, but is there even one video in the folder or camera card you are trying to import?

Use your operating system's search feature to search all folders on all drives for files whose name ends with .LRCAT (these are the catalog files) Once you find those files, one of those may be the catalog file you were using. Double-click on each catalog to open it in Lightroom Classic until you find the catalog file you want.

The fact that this high end computer doesn't speed through your work indiates that something is interfering with LrC. It doesn't indicate you need an even better computer. However, determining the cause of slowness could is often difficult. Some things to check (and I realize this is a small part of a very long list) Make sure you have the most recent Studio driver for your GPU. If you have a Game-Ready driver, uninstall that and install the most recent Studio driver. Make sure you anti-virus is not scanning the folder with the LrC catalog and not scanning the folder with your photos

All of this sounds normal and it also sounds as if nothing is wrong. JPG is a compression technology, the compressed photo size can vary depending on a lot of factors. The size of the JPG file does not indicate quality. This is so important, I am going to say it again: The size of the JPG file does not indicate quality. The GPU was first released to the public 9 years ago. It is a slow GPU by today's standards, and that's why it worked well for a few years but now it seems that the actions it needs to perform in LrC take longer and longer. As I said, over the years, LrC has been programmed to use the GPU a lot more to perform standard tasks, leading you to feel that LrC is getting slower. You need a newer GPU.

Not sure if my memory is correct, but I think 13.2 used a different catalog internal format than 13.3, so some research is needed. Yes it would make a big difference. I think someone (yes, I mean you @norbdam) should search the forum to see what solutions have been found.

Make sure you have installed the most up-to-date Studio driver for your GPU. (Game-ready drivers are not recommended for LrC) Your GPU is 9 years old and this is a likely cause of the slowness you see, as newer versions of LrC are written to make more and more use of the GPU. It is unlikely a re-install of LrC will cause the desired improvement.

High temperatures indicate that the cooling system is doing a lot of work, and possibly some element of the cooling system has stopped working. The fact that it is a gaming PC with lots of power and temperature management doesn't help if some part of the cooling system has stopped working. Check to make sure all fans are spinning, and the case is not clogged with dust and the vents are free of dust and the vents are not blocked by furniture or a wall or something else.

If you are exceeding the storage space, then you have really only one more choice and that is to get another hard disk and put your photos (and catalog) on that new disk. Step by step tutorials on converting from Photos to LrC: https://lightroomguy.com/import-images-from-apple-photos-into-lightroom-classic/ (and Google finds many other similar articles) "... how to handle filing and storage" is very vague. Your photo files can go anywhere you want. Your catalog can go anywhere you want, but it would be best (if you have space for it) on your fastest disk. If you have specific questions, please ask.
