I have a large pdf document I need to distribute to a crew of workers and am wondering if 1) it would be significantly smaller if all images were greyscale, and 2) is there an action in Acrobat that would do that?

You can use the Preflight tool to convert the file to Grayscale.

There is no option in Preflight to make something grayscale.
