Work has just purchased a license for Adobe Acrobat 17 Pro, this was to enable us to redact sensitive information.  I have looked everywhere for help to do this, but can't find help anywhere.

Acrobat Reader can't redact documents. Install and use Adobe Acrobat.

You said work purchased Acrobat 17 Pro (maybe you mean 2017 or DC?)

But you opened the free Reader, according to your screen shot. If you have Acrobat Pro, open it instead, and then ask again if you can't find Redact.

I'm glad it's working for you now, Pete. I'm wondering if the reason the Redact button appeared is that you have now opened Acrobat Pro? Your earlier screen shots were of Reader.

If it happens again, check your title bar to see which software you have launched.
