I upgraded to Premium and my card has been charged but when I try to edit my PDFs on the app (ios) it shows that I have a free account, but the subscriptions on apple show it's been paid and valid for a month.

We are sorry for the trouble. As described you are unable to edit the PDF and getting the message that you have a free account.
Please try to logout of the application, reboot the device and relogin with the same Adobe ID (used for subscription) and check.
Also try to restore purchase as described and see if that works for you, go to Profile icon > Subscriptions > Restore purchase.
