Why iphone SE artboard removed from Artboard selection ?
The iPhone SE has been discontinued, so that's probably why it was deemed non-essential as an artboard template 🙂 Also, I think it makes up less than 1% of mobile resolutions, so it's becoming relatively irrelevant.
Its viewport size is 320 x 568, so you can manually resize your artboard to that size and you are ready to go.
The iPhone SE2 has the same viewport as iPhone 6/7/8, as Kenneth pointed out, so a separate artboard for it is not needed.

You can use iPhone 6, 7, 8 (375 x 667) since iPhone SE is the same viewport size.
