So I have a project that currently has 5 compositions. I want to take the last composition and save it as a separate project. Is it possible to do so?

Just do a Save As, give the new AEP a different file name, then select the comp you want to keep in the project panel and select File/Dependencies/Reduce Project and all assets and comps not used in the comp you want to keep will be removed. Save the file again and you are done. If you want to keep the new file as a template instead of a normal AEP use File/Save or Save As and spin down the options in the popup to save the file as an AET Template file so it can't be fouled up or saved over in the future.
