I've asked this on a different part of the forum - do I still need to install a Java Run-Time Client for Illustrator or for any other Adobe product?

Yes Deanobear the java requirement has not been removed for all of the Adobe applications included within the Creative Cloud Membership.  You can find more specifics in the System requirements for each software title at System requirements | Creative Cloud.
