If I create a graphic in Illustrator in which I use a font from the Illustrator range, can I use this
graphic freely commercially? Isn't it a copyright infringement?

Hi.

You are not allowed to distribute the Font within the Illustrator file.

You can create outlines or use some Adobe Fonts that let the user activate it on the fly.

Check some of the new Adobe Stock Templates as samples.
