In Illustrator 25.1.0 object and text center points are not visible in outline mode. This has nothing to do with hiding edges.
Using GPU at 100% a tiny dot is visible, zooming out it becomes more and more like the centerpoint from previous versions. Zoom above 100% and the tiny dot disappears.

If you haven't done so already, you might try going to View menu > View using CPU.

Thank you Peter. That seems to have worked although I don't know why this has only just happened with the last Illustrator update.

Hi Nicky,
Sorry to hear about your experience. Would you mind sharing the version of the OS? Does it happen while working on a specific file or all? This information would help us look into it & assist you accordingly.
Regards,
Ashutosh

Ashutosh - The Illustrator version is 25.1.0. The newest version. The center anchor points for objects and type are no longer visible in outline mode unless selected. Until this version they have always been visible unselected.

Do you see a centerpoint in outline mode above 100% zoom when the object is not selected and the attribute centerpoint is not active?
Zoom out a lot and the centerpoint becomes visible.

It looks like a bug, same problem in the latest beta.
You may want to mention it here:

Sorry. I do not understand.
This is the same behaviour as in CC2018 an CC2019 … and also in my old CS2 !!!
If the centerpoint is not active in the Attribute Panel you can't see it. Why should it be any different? Has it ever been different?

You are right, the centerpoint has to be checked.
What is different that is becomes invisible when zoomed in in 2021.

(hovering with) mouse pointer over the center point while Smart Guides are activated
