How do I increase the image size by creating a white border around my image?  I want to keep the image the same size, but I want to add a blank/white border around it so the logo looks smaller when used in the same size field.

is your logo a vector shape (or group of shapes)?
If yes, you can use Object > Path > Offset Path with the needed value (the border width). Fill it white, send back and group with the logo.

As I (mis)understand it, you can also create an Artboard with the desired size, place the artwork within, and then  use the Artboard when saving/exporting.
