when will LR 5.7.1 be updated for the Nikon D5 and D500?
There will be no more updates for Lightroom 5. Your choice is to upgrade to Lightroom 6 or Lightroom CC, or use the free DNG converter (latest version) to create DNG copies that you can open and Lightroom 5.7.1.
Lightroom 5.7.1 will not be updated anymore as Lightroom6/CC is the current version.
You can either upgrade to Lightroom 6/CC to access Nikon D5 and D5500 raw files or download free DNG Converter.

Having downloaded the latest version of Converter, used the Converter software to select folder with D500 Raw Photos files in; the original D500 Raw photo files were converted to DNG and was able to post processed by Lightroom 5.7.1 software.

Indicate that you want to purchase an upgrade and the price will change. Follow the prompts to make your purchase. After you install Lightroom 6 it will probably be necessary for you to run an update to ensure that you are running the latest version. When Lightroom 6.5 is installed your D5 will be supported. But it appears that it will be necessary for you to wait for the next update before the D500 is supported.

ok great to hear, thank you. Last question. Aside from the obvious with the CC being always updated. Would I want the CC over a 1 time purchase? or just purchase the actual program like I have done since it was introduced?
CC is definitely better because you get not only upgrades but Lightroom Mobile is also included in Lightroom CC plan so that you can install Lightroom Mobile application on your iOS/Android device and sync the images with Lightroom desktop directly.
Also, CC Photography plan includes Lightroom as well as Photoshop.
Chetna has given you additional info that should help in your decision. To wit there is no Lightroom CC individual offer from Adobe.
There is the Adobe CC Photographers plan this is Adobe Photoshop CC their premier photo editing product which includes Bridge and Adobe Camera Raw, Lightroom CC is also included as a "gratis" offer. You are paying for Photoshop CC since the file management and raw processing options are also provided in Bridge / ACR. You would have to decide if the superior and advanced photo editing features available in Photoshop CC are appealing to you.
Lightroom is not an alternative to Photoshop, it is an alternative to Bridge / ACR.
Before purchasing either LR 6 or a subscription, it might be wise to download and install LR 6 and update it to LR 6.5, to see if it even runs on your computer, reasonably well. It can use the GPU to speed up Develop module operations but underpowered GPUs can perform worse than the CPU so you might need to turn off the GPU in LR / Prefs / Performance.
To run it in trial mode, first, instead of clicking Buy on the page linked, earlier, click on the Lightroom link and then Download on the next screen. A LR 6 trial starts out as a LR CC trial. If you decide to get LR 6 you’d just enter your serial number and it’ll revert to LR 6, where you’ll lose Dehaze and Boundary Warp on panoramas and B/W Adjustment brushes. If you want to license CC then you’d just buy it and login in with the AdobeID associated with the paid subscription. The features you lose if you buy LR 6 would presumably show up in LR 7, assuming there will be a LR 7. We’re already up to LR 6.5 in the version sequence for LR 6 so I’m guessing LR 7 would be less than a year away and you’d need to pay another upgrade fee, again, to enable the features. I have no inside knowledge about if or when a LR 7 version might be released, so my guesses are based on prior version release timeframes.
