Could someone tell me the difference in the High quality 1080p HD option versus the YouTube 1080p Full HD option for exporting a video? I have done the first for display on a TV screen at an art center, but don't know if I should use the same one for their YouTube channel or re-export as a YouTube version. Sorry, I am a newbie.

Check the settings for both, to see if there are any differences. Simply click the preset, and then see what settings it applies. Click the other preset, see what settings are applied.
There isn't any "special" YouTube-only set of settings ... just some things that generally work. A lot of people just start with the included preset, modify it more to their taste/needs, and save that preset. And some I know of use DNxHD/R in their own preset, as they get better quality final appearence in their YouTube channel that way.
Everyone's mileage always varies.
