Although it seems counterintuitive to you, expanding your selection is the correct thing to do. Please watch this tutorial from Jesús Ramirez where he selects loosely with the lasso tool and sets his options bar with different settings from yours.

For your second question, swapping the fill and stroke colors has always been in Illustrator, but never in Photoshop. In Illustrator, "X" is a shortcut to swap the fill and stroke. in Photoshop, "X" is a shortcut to bring the foreground or background swatch to the front.
For your third question, the color panel they used for years made less sense than what they have now, in my opinion. The Adobe team changed the way that color swatches are displayed several versions ago, so this is not new. The colors are grouped together in a logical way, unless you are looking at the recent list at the very top of the panel, which displays colors that you have used recently. I expect that most Creatives want to create their own set of colors and not use any provided by Adobe.
The list of Recents can be disabled in the swatches panel menu.

Adobe does not reset activations. You need to have at least one valid activation available before you can activate on another computer.
When you say, " I have Adobe Creative Suite through my work, and it is installed on both my work and home computers," do you really mean Creative Suite (CS through CS6) or do you actually mean Creative Cloud (2013 through 2025)? Which specific version of CS or CC does your work provide?

What is the original PPI and size in pixels?
When you make changes in Photoshop, they are permanent, so be sure to do it on a copy of the image. When you scale in InDesign, it is non-destructive. Be sure to watch both the PPI and the Effective PPI.

This was done by your OS and is called File Associations. When you double click in Finder or File Explorer, then the file opens in the application it is associated with (the most recent application that was installed.). You can always open the application first and choose File menu > Open.
File associations can be changed. You can find instructions in Microsoft help, macOS help, or Adobe Help:
