So i am thinking this workaround-
Consider using the Folder Date method when setting the Import Destination panel options.
Then the Import [Destination Folder] interface should be useful (see my screen-clip above),
Also you have the opportunity to make selective 'date' imports in the Destination panel.
Note the ticks against the dated folders in my screen-clip: You can uncheck these ticks. Only photos in folders that are ticked will be imported.
The destination panel uses the greyed-out folder names (icons show+) to indicate new folders that will be created, and the number of photos that will be imported to each folder.

The word "Watermark" does not appear anywhere in the 'official' Adobe help page-

It doesn't appear. "HDR" is only added to the new image filename. See the filenames on the images in the screen-clip I included in a previous post.
The tutorial is suggesting a way to find all images with "HDR" in the filename. Perhaps you are not seeing the Filter bar on your screen. If you don't see the Filter/Search bar press the backslash key [ \ ]

I am fairly certain that the import dialog of Lightroom-Classic can do everything you ask-
"Date - only display a shoot from a certain day ( as opposed to all shoots on the camera card)"
You can sort the import screen several ways- one is 'Capture Time', but see the next answer also
Or if you have set Import Destination toOrganize by Date-
you will see the destination for files in a preview of the destination Folders panel-
Also: The Import dialog can also be set to [COPY] and [Destination Folders] to give you a preview in the Import dialog where you can [Un-check All] and [Check] only those in a Dated section- (Note the 'Date' dividers- "20210306", etc)
Use standard selection methods eg. [Click] > [Shift+Click] then [Tick] one photo for a contiguous series selection.
"type- filter by file type within each section" is also available in this 'Sort' dialog with 'File Type'. Maybe not easy to see, but files will be sorted in alphabetic grouping - DNG, JPG, NEF, PSD, TIF Needs you to look at the file names on the previews.

In the source panel of Import you can select Folders on the Camera Card. Just expand the "Files" section and your camera folders should appear.
OTOH The 'Devices' panel will show all photos on the card (and grey-out those that have already been imported)

@inath68 Where are you reading those instructions? If it is AI generated, then it is wrong.
As stated by @Sameer K There is no (easy) watermark function in the Book Module. Only a Graphic page background, or as Photo Text.
If you want a 'watermark' to appear on every image, then you will need to Export all photos suitable for the book to a folder (Add to catalog). Then use these photos for the book creation.

@Dick_Davis Are you trying to achieve a Filter Search for images that have HDR in the filename?
"I do not see any text on the HDR image."- By default the merge process can create the DNG file with a filename that has "HDR" appended to the filename.
As @Aleke says- More details would be helpful.

I doubt you are doing anything wrong, and JPG file sizes can be un-predictable- always smaller!
You have a reduction of 'bit' size (down to 8bit), compression by the algorithims to produce a JPG (you can set the quality slider), and the detail content in the image can have a large influence.
eg. a photo of a blank sky might compress to a very small JPG (50Kb) whereas an image of dense foliage might be larger (10Mb)
The only real test is to open your JPG file in LrC and look at the detail (at 100%) to determine visually if satisfactory.
Megabyte size of a JPG file is rarely (never!) a guide to the pixel content of the image when viewed (expanded by the viewing app).

Your external SSD will appear in Windows File Explorer with a drive letter- D, E, etc.
When you Import photos from your camera SD card, you set the Import option to [COPY] from the camera card, and in the Destination panel of the Import dialog you set the Destination of the files to be the external SSD.
This is only about storing and referencing your photo files on the external SSD. The Catalog can remain on the internal drive.
With the external SSD plugged in you will have access to all photos in the library. If un-plugged you will see 'missing' photos. Some people work around this by creating Smart Previews with the internal catalog. (Smart Preview also occupy storage, but not as much as the original files.)
Be aware that windows allocates a drive letter in the order that externals are plugged in, so if you have multiple external devices you may also see 'Missing' photos. The way to prevent this is to name the SSD drive with a letter further along the alphabet eg. P or S.

"Built Smart Previews for every image at import"- Not Necessary! The Sync process does this automatically.
"Disabled the option in Preferences for a specific folder location for Lightroom’s synced images." - Why? Specifying a folder makes it easier to find images in the LrC catalog. Lightroom-Classic is the Master when sync is enabled- ALL original files added to Lightroom by the mobile apps automatically download to the Lightroom-Classic catalog and are saved as specified in the Sync Locatation Preferences.
"Created a synced Collection containing only Smart Preview–ready images." - Again, Smart Previews need not be created. You can create a synced collection of any images in the Library, even if Smart Previews have not been manually created..
"Verified in Library metadata that Smart Previews are present." - Again, not necessary. You do not need to 'manually' create Smart Previews at any time (unless you have another reason.)
"Is there a reliable way to force Lightroom Classic to sync only the Smart Previews, even if the RAWs are available?" - As stated in other replies- only Smart Previews sync UP to the Lr cloud.
"Is there any method to view both the Smart Preview and RAW side-by-side or identify which file was edited on mobile so I can copy those adjustments onto the local RAW in Classic?" - You only ever see the proxy Smart Preview in mobile apps for images synced UP from Lightroom-Classic, and edits to an image in Lightroom will auto sync to the image in the LrC synced collection (and visible in Library or Develop views).
"Is the only workaround to upload Virtual Copies instead of RAWs?" - Virtual Copies are simply the catalogs way of creating alternative processing steps to the one original photo. Whichever photo you sync UP, be that the 'original' or a 'Virtual copy', the edits applied to each are synced with Lightroom.
Examples-
LrC Original and Virtual Copy- both added to a synced Collection:
Lr- Showing both images to edit individually:
Whatever you add to a synced Collection in LrC, be that 'original' or 'Virtual copy', LrC will sync that image with Lightroom. No need to create Smart Previews, (or Virtual Copies unless you want alternative edits shown)

There is no need to do any type of "importing" (Neither Importing a Catalog, nor importing photos).
If Lightroom-Classic has not automatically recognised your Lr5 catalog (and asked you to upgrade the catalog), then-
1) Close Lightroom-Classic
2) Find your Lr5 catalog with Windows FIle Explorer
3) [Double-Click] the catalog .LRCAT file to 'open' it
4) When it asks, Allow Lightroom-Classic to do the catalog upgrade making your catalog compatible with Lr-Classic.
Hint: Give the upgraded catalog a new name and set Preferences to always open this upgraded catalog.

"When I try to import them......". If 'Lightroom-Classic' is set to sync there should be no reason to Import anything.
The Sync will automatically download images imported to 'Lightroom', save them in a local folder, and add them to the LrC Catalog.
Maybe you are seeing greyed out previews in the import dialog because LrC believes you are importing duplicates of photos that already exist in the catalog (exist because of the automatic sync download).
Note: I am also personally confused by the complications of using both Lightroom and Lightroom-Classic in the one computer.

And as CescoP's plan was notified as 'ending' it was crucial that the plan payment method was changed to 'annual' BEFORE the end-date of the plan. If CescoP delays and allows the Plan to expire (or cancels the Plan) then re-subscribing will be to the new, more expensive, plan.
"a monthly billed Photography plan has never been offered in my region (UK)" I cannot comment of particular country differences (I am in Australia), but TBMK Adobe always offered the 12month Annual Plan -Paid Monthly or Annually.

TBMK- Yes, the 'Data' can be rebuilt if the file has been deleted. (Why would you delete it?). And it is automatically included with Catalog Backups when exiting LrC
"related to LUTs" I don't think so- Anything I have seen about LUTs is that they can be used as 'Profiles' in LrC.

Lightroom does not have remane templates (as does Lightroom-Classic). You only have the three options-
'Custom Name' as you have discovered only allows the same Custom Text and a Sequence number for all images shared.

"I wanted to import the next 100"- If you use "import" by its correct meaning, this means that you are, in fact, using the cloud sync. Any Importing to Lightroom (Desktop, mobile, phone) syncs the full-size files to Cloud storage using internet.
If you intend not using sync then you need to be working in 'Local' mode and simply browsing to folders where you photo files are stored in a local folder (Do not Import or Add photos to Lr.)
IMO For your purposes Lightroom is no more useful (or less so) than Lightroom-Classic.

In simple terms-
2) Any edits that you do in Lightroom-Classic that involve AI (Artificial Intelligence) eg. Generative Fill, Generative Remove, etc.
1) LrC records the AI edits in the .LRCAT-DATA folder. Don't delete the file.
If you backup the Catalog using the Backup dialog when you exit LrC, the created ZIP file contains both the .LRCAT catalog and the .LRCAT-DATA file, so nothing further to be done. (Check this out by looking into a ZIP backup file.)

John, first question- Are you using Lightroom or Lightroom-Classic?
If Lightroom, then Lr uses Albums that can be grouped in (so called) folders.
If Lightroom-Classic, then I would suggest you investigate your settings in the [Destination] panel of the import screen.
