マックでの使用で文字パネル、段落パネルで設定項目が全部でない

Illustratorのメニュー［環境設定 > テキスト...］の「東アジア言語のオプション表示」のチェックがOFFになっているのかもしれません。もしOFFになっていたらONにしてください。

（なお、旧バージョンでは「東アジア言語～」ではなく「日本語オプションを表示」と表記されています）
