そもそもiPad版のIllustratorはまだ製品としては存在していません。2020年中にローンチされる予定です。

今のところの情報ではPC版のIllustratorにはない機能に焦点を当てて広報されているので、実際に出るまでは別製品だと思っていた方がよいでしょう。

Photoshopは出ています。PC版に比べてかなり多くの機能が実装されていないので、具体的に使いたい機能がある場合は、それが使えるかどうかで違います。使いたい機能が実装されていれば、PC版よりも起動が速かったりするので比較対象になります。しかし使いたい機能が実装されていなければ、単にPSDデータを表示するだけのソフトウェアになる可能性もあります。

詳しく知りたければ、ネットで検索するなり、別のところで質問される方がよいでしょう。ここはAdobeのコミュニティですので、限界があります。

Do you mean on OSX on a Mac? Illustrator and Photoshop cannot be run on iOS.
