Best configuration with RAID and SSD

I've come into possession of a Mac Pro 5,1 (6- Core Intel Xeon, 2.66Ghz, 32Gb RAM) with three 2TB HDD's that are RAID configured and a 500Gb SSD root drive.

What would be the best way to set up scratch disks, media cache, project files, etc? At the moment I've sent everything to the 6TB RAID and with only the OSX on the SSD.

    If you can, add/replace as many HDDs with SSDs. That will vastly improve performance.

    I have my machine set up as follows:

    - SSD 500GB for OS

    - SSD 1TB for docs

    - SSD 1TB for media (source footage/final projects)

    - SSD M.2 250GB for temp

    Especially the latter is the fastest drive.

    Next up is to have a fast enough video card and enough RAM.

    What RAID level?

    How is the RAID connected?  Internal or External, if External what interface to your computer.
