New Build i9 - Comments?

I get bogged down trying to get a specific build listed for comment. I've seen how much difference small changes can make in the advantages and disadvantages of various component combinations. So let me start with the bigger picture.

I'm willing to spend reasonable $s for what may be my last serious build. I'm now mostly retired, but have a lot of retirement projects of my own to do. So think Puget $6,000ish, but I like to build my own. I don't want to spend money unnecessarily, so willing to still look at i7s for example. But I'd like to build in some future-proofing, and I run a lot of different programs. Not really an over-clocker, but you never know...

For example, i9 7940X, X299 (Gigabyte Designare vs Asus what? vs ?), 64GB DDR4 2666, SSD system drive (Samsung 860), 2X SSD M.2 (Samsung 970 Pro 1TB), GTX 1080ti (EVGA vs what? vs 1070 vs?).

Or i7 7820X with same other components.

Next tier of considerations: Case (roomy, quiet), Power supply (calculate size), CPU Cooling type.
