You might try resetting preferences for Acrobat, please visit this link on how to reset preferences in Acrobat: How to reset Preference settings in Acrobat. After resetting the preferences, launch Acrobat and try to create pdf from scanner and see if its still crashes.

If that doesn't work, try to perform the steps given in this link: Troubleshooting tips for scanner issues when using Acrobat
