Adobe acrobat pro - output preview colours on a file - error?

When I export a pdf with multiple layers and swatches and I want to turn off the top covering colour, it doesn't show the complete text/vector below

Turned off the pink highbuild (in illustrator this is a separate layer and swatch) see below is doesn't show the below layer correctly as it should/does in illustrator
