Adobe has suddenly starting saving all my PDFs with a grid over it. How do I turn this off?

Turn the Snap To Grid option on or off:-

Choose View > Show/Hide > Rulers & Grids > Snap To Grid. A check mark appears next to the command name when the option is turned on.

It's more likely the Grid option itself under that menu, not Snap to Grid.
