converting fillable fields to read only as they are filled in?

I was wondering if there was anyway to have a fillable field automatically converted to a read only field once text is entered and the document is saved, but also keeping all the empty fillable fields open. I am trying to create quality control logs that can be filled out daily and saved each day. I would like users to only be able to fill out the fields once a day in a single document. I know this can be accomplished with the digital signature but I was hoping for something a little simpler for the end user since it will be saved to one computer in a work space.

It's possible to do it with a script, but I think you should consider carefully if this is a good idea... What if someone fills in the form (partially), closes it and then wants to go back and edit what they already entered for some reason. You'll be preventing them the option to do it, which can be very annoying for the end-user. And since it's not a digital signature this kind of "protection" is not worth much anyway. It's very easy for someone who wants to do it to go and edit those fields...
