Do fonts stay with a pdf?

I am in the process of scanning some books.

We are trying to decide whether to use pdf, or PDF/A

File size is a concern

some of our documents (books) get up to 600MB

Can I embed a font that stays with a regular pdf ?

Also do you have any training online for Adobe Pro XI ?
