Exporting PDF data to Excel

Hi all, so I was curious as to what method adobe utilises to order data when exporting it to excel. From what I can see everything appears to be ordered alphabetically first, then in the order it appears in the source document, is this the case?

A number of fields have also come out as "undefined", which throws a bit of a spanner in the works so I was hoping a better understanding of how the data is ordered would help me determine where these sections reside in the source document.
