Fill and Sign - can't fill....

I downloaded a fillable pdf to my desktop.  I used the fill and sign feature to fill it in and sign it, then resaved the filled form to my desktop.  Now, I need to go back in and change one of the filled in fields.  I click on fill and sign, but nothing appears on the toolbar, except for the sign icon.  It won't let me change any of the previously filled in fields. Perhaps I'm using this wrong...  but what I wanted to do was save a filled in form for continued use, but I'll always need to change this one particular field.  I don't want to have to fill all of the fields out every time, when only one changes.

If you used Fill & Sign, the form did not include fillable fields. The reason Fill & Sign was developed is to allow uses to work with forms that don't have interactive form fields. If you want to be able to use such a form, don't sign it. When you're finished and you do sign it, save it as a new file so you'll be able to edit the unsigned version if needed.

Thanks.  Being new to using Adobe, I was not aware that this is how it

worked.
