How can I cancel (erase) a text recognition on a PDF document ?

I have an old book with an OCR done, but the quality of the OCR is bad.

Or I have done a double OCR on the same document (so each search appears twice)

I would like to cancel the previous OCR, and then make a new one with Acrobat DC.

How can I do that please ?
