How do I create a form where only the sender can edit certain fields each time, but the signer can only sign?

I have created a fillable PDF. When I send it for signature, I want the info I change every time to be locked to the signer. When I try to do this, the text disappears. When I take the setting off sender in "prepare form" mode, then the signer can edit the information I entered. I do not want this. I wan to be able to fill my info each time on the form nad them to be able to only sign, but still see the info I entered. How can I do this?
