I scanned a document onto my computer and want to edit some of the text. It's not giving me that option. Can I do that and how?

Assuming you are using Adobe Reader DC and want to edit the scanned PDF.

If they are using Adobe Reader DC then they can't do it. Your link is to a tutorial for Adobe Acrobat DC, not for Reader...
